Steps
- Preheat your grill or BBQ to medium-high heat.
- Wash and cut the zucchini and eggplant into 1.5 cm cubes.
- Core and cut the red and yellow bell peppers into 1.5 cm pieces.
- In a bowl, combine the olive oil, minced garlic, chopped basil, thyme, salt, and black pepper to create the herb oil.
- Thread the zucchini, eggplant, bell peppers, and cherry tomatoes onto the wooden skewers, alternating the vegetables for a colorful presentation.
