  • Zucchini - 1 medium
  • Eggplant - 1 small
  • Red bell pepper - 1 medium
  • Yellow bell pepper - 1 medium
  • Cherry tomatoes - 200 grams
  • Olive oil - 2 tablespoons
  • Fresh basil - 10 grams
  • Fresh thyme - 5 grams
  • Garlic - 1 clove
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Wooden skewers - 4

Steps

  1. Preheat your grill or BBQ to medium-high heat.
  2. Wash and cut the zucchini and eggplant into 1.5 cm cubes.
  3. Core and cut the red and yellow bell peppers into 1.5 cm pieces.
  4. In a bowl, combine the olive oil, minced garlic, chopped basil, thyme, salt, and black pepper to create the herb oil.
  5. Thread the zucchini, eggplant, bell peppers, and cherry tomatoes onto the wooden skewers, alternating the vegetables for a colorful presentation.
  6. Brush the assembled skewers generously with the herb oil mixture.
  7. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until the vegetables are tender and slightly charred.
