  • Zucchini - 100 grams
  • Eggplant - 100 grams
  • Red bell pepper - 80 grams
  • Yellow bell pepper - 80 grams
  • Cherry tomatoes - 100 grams
  • Onion - 50 grams
  • Garlic - 2 cloves
  • Olive oil - 2 tablespoons
  • Eggs - 4 large
  • Fresh basil - 10 grams
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Feta cheese - 50 grams

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Dice the zucchini, eggplant, red bell pepper, yellow bell pepper, and onion into small cubes.
  3. Chop the garlic and cherry tomatoes in half.
  4. In a large oven-safe skillet, heat the olive oil over medium heat. Add the onion and garlic, sautéing until soft and fragrant, about 3 minutes.
  5. Add the zucchini, eggplant, and peppers to the skillet. Season with salt and pepper, and sauté for about 5-7 minutes until the vegetables are tender.
  6. Stir in the cherry tomatoes and cook for an additional 3 minutes.
  7. Create four small wells in the vegetable mixture and crack an egg into each well.
  8. Sprinkle crumbled feta cheese and fresh basil over the top.
  9. Transfer the skillet to the oven and bake for 10-12 minutes, or until the eggs are cooked to your desired doneness.
  10. Remove from the oven, garnish with additional fresh basil, and serve hot.
