- Cherry tomatoes - 100 grams
- Onion - 50 grams
- Garlic - 2 cloves
- Olive oil - 2 tablespoons
- Eggs - 4 large
- Fresh basil - 10 grams
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Feta cheese - 50 grams
Steps
- Preheat the oven to 180°C (350°F).
- Dice the zucchini, eggplant, red bell pepper, yellow bell pepper, and onion into small cubes.
- Chop the garlic and cherry tomatoes in half.
- In a large oven-safe skillet, heat the olive oil over medium heat. Add the onion and garlic, sautéing until soft and fragrant, about 3 minutes.
- Add the zucchini, eggplant, and peppers to the skillet. Season with salt and pepper, and sauté for about 5-7 minutes until the vegetables are tender.
- Stir in the cherry tomatoes and cook for an additional 3 minutes.
- Create four small wells in the vegetable mixture and crack an egg into each well.
- Sprinkle crumbled feta cheese and fresh basil over the top.
- Transfer the skillet to the oven and bake for 10-12 minutes, or until the eggs are cooked to your desired doneness.
- Remove from the oven, garnish with additional fresh basil, and serve hot.
