Ingredients

  • Zucchini - 1 medium (about 200g)
  • Eggplant - 1 medium (about 250g)
  • Red bell pepper - 1 medium (about 150g)
  • Yellow bell pepper - 1 medium (about 150g)
  • Red onion - 1 medium (about 150g)
  • Garlic - 3 cloves, minced
  • Olive oil - 4 tablespoons
  • Fresh thyme - 1 teaspoon, chopped
  • Fresh basil - 1 teaspoon, chopped
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Balsamic vinegar - 1 tablespoon

Steps

  1. Preheat the grill to medium heat (about 180-200°C / 350-400°F).
  2. Wash and slice the zucchini and eggplant into 1 cm thick rounds.
  3. Core and slice the bell peppers into strips.
  4. Peel and slice the red onion into wedges.
  5. In a large bowl, combine olive oil, minced garlic, thyme, basil, salt, black pepper, and balsamic vinegar.
  6. Add the sliced vegetables to the bowl and toss until they are well coated with the marinade.
  7. Let the vegetables marinate for at least 10 minutes to absorb the flavors.
  8. Place the marinated vegetables on the preheated grill. Grill for about 5-7 minutes on each side, or until they are tender and have nice grill marks.
  9. Once grilled, remove the vegetables from the grill and let them rest for a few minutes before serving.
  10. Serve warm as a side dish or over a bed of couscous or quinoa for a complete meal.
