- Zucchini - 1 medium (about 200g)
- Eggplant - 1 medium (about 250g)
- Red bell pepper - 1 medium (about 150g)
- Yellow bell pepper - 1 medium (about 150g)
- Red onion - 1 medium (about 150g)
- Garlic - 3 cloves, minced
- Olive oil - 4 tablespoons
- Fresh thyme - 1 teaspoon, chopped
- Fresh basil - 1 teaspoon, chopped
- Salt - 1 teaspoon
- Black pepper - ½ teaspoon
- Balsamic vinegar - 1 tablespoon
Steps
- Preheat the grill to medium heat (about 180-200°C / 350-400°F).
- Wash and slice the zucchini and eggplant into 1 cm thick rounds.
- Core and slice the bell peppers into strips.
- Peel and slice the red onion into wedges.
- In a large bowl, combine olive oil, minced garlic, thyme, basil, salt, black pepper, and balsamic vinegar.
- Add the sliced vegetables to the bowl and toss until they are well coated with the marinade.
- Let the vegetables marinate for at least 10 minutes to absorb the flavors.
- Place the marinated vegetables on the preheated grill. Grill for about 5-7 minutes on each side, or until they are tender and have nice grill marks.
- Once grilled, remove the vegetables from the grill and let them rest for a few minutes before serving.
- Serve warm as a side dish or over a bed of couscous or quinoa for a complete meal.
