Ingredients

  • Zucchini - 1 medium, cut into 2 cm cubes
  • Eggplant - 1 small, cut into 2 cm cubes
  • Red bell pepper - 1 medium, cut into 2 cm pieces
  • Yellow bell pepper - 1 medium, cut into 2 cm pieces
  • Cherry tomatoes - 200 grams
  • Red onion - 1 small, cut into wedges
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh basil - 10 leaves, chopped
  • Dried oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Wooden skewers - 4, soaked in water for 30 minutes

Steps

  1. Preheat the grill to medium-high heat.
  2. In a large bowl, combine the zucchini, eggplant, red and yellow bell peppers, cherry tomatoes, and red onion.
  3. In a separate small bowl, whisk together the olive oil, minced garlic, chopped basil, dried oregano, salt, and black pepper.
  4. Pour the marinade over the vegetables and toss well to coat evenly.
  5. Thread the marinated vegetables onto the soaked wooden skewers, alternating between different types of vegetables.
  6. Place the skewers on the preheated grill and cook for about 10-12 minutes, turning occasionally until the vegetables are tender and slightly charred.
  7. Remove the skewers from the grill and let them rest for a couple of minutes before serving.
