- Eggplant - 1 small, cut into 2 cm cubes
- Red bell pepper - 1 medium, cut into 2 cm pieces
- Yellow bell pepper - 1 medium, cut into 2 cm pieces
- Cherry tomatoes - 200 grams
- Red onion - 1 small, cut into wedges
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Fresh basil - 10 leaves, chopped
- Dried oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Wooden skewers - 4, soaked in water for 30 minutes
Steps
- Preheat the grill to medium-high heat.
- In a large bowl, combine the zucchini, eggplant, red and yellow bell peppers, cherry tomatoes, and red onion.
- In a separate small bowl, whisk together the olive oil, minced garlic, chopped basil, dried oregano, salt, and black pepper.
- Pour the marinade over the vegetables and toss well to coat evenly.
- Thread the marinated vegetables onto the soaked wooden skewers, alternating between different types of vegetables.
- Place the skewers on the preheated grill and cook for about 10-12 minutes, turning occasionally until the vegetables are tender and slightly charred.
- Remove the skewers from the grill and let them rest for a couple of minutes before serving.
