- Red onion - 1 small, sliced
- Cherry tomatoes - 200 grams, halved
- Garlic - 2 cloves, minced
- Fresh basil - 10 grams, chopped
- Olive oil - 2 tablespoons
- Balsamic vinegar - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- Preheat the grill to medium-high heat.
- In a large bowl, combine sliced zucchini, cubed eggplant, bell peppers, sliced red onion, cherry tomatoes, minced garlic, chopped basil, olive oil, balsamic vinegar, salt, and black pepper. Toss to coat the vegetables evenly.
- Thread the mixed vegetables onto skewers, alternating between different types for a colorful presentation.
- Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the vegetables are tender and have nice grill marks.
