Ingredients
- Whole wheat flour - 150g
- Cold unsalted butter - 75g
- Ice water - 50ml
- Zucchini - 100g, thinly sliced
- Eggplant - 100g, thinly sliced
- Red bell pepper - 100g, thinly sliced
- Yellow bell pepper - 100g, thinly sliced
- Garlic - 2 cloves, minced
- Fresh thyme - 1 teaspoon, chopped
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Grated Parmesan cheese - 30g (optional)
Steps
- Preheat the BBQ grill to medium heat.
- In a mixing bowl, combine whole wheat flour and a pinch of salt. Cut in cold unsalted butter until the mixture resembles coarse crumbs.
- Gradually add ice water, mixing until a dough forms. Wrap in plastic wrap and refrigerate for 30 minutes.
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Add sliced zucchini, eggplant, and bell peppers to the skillet. Season with salt, black pepper, and chopped thyme. Cook for about 10 minutes until vegetables are tender. Remove from heat and let cool.
- On a lightly floured surface, roll out the chilled dough into a circle about 30 cm in diameter.
- Transfer the dough to a baking sheet lined with parchment paper. Arrange the cooled vegetable mixture in the center, leaving a 5 cm border.
- Fold the edges of the dough over the filling, pleating as necessary to create a galette shape.
- Sprinkle grated Parmesan cheese over the top, if using.
- Place the galette on the BBQ grill, close the lid, and cook for about 25-30 minutes or until the crust is golden brown and crispy.
- Remove from the grill, let cool slightly, and serve warm.
