- Flatbread - 2 pieces
- Zucchini - 100 grams, diced
- Eggplant - 100 grams, diced
- Bell pepper - 100 grams, diced
- Red onion - 50 grams, thinly sliced
- Garlic - 2 cloves, minced
- Tomato - 1 medium, diced
- Olive oil - 2 tablespoons
- Fresh basil - 10 grams, chopped
- Thyme - 1 teaspoon, dried
- Salt - 1/2 teaspoon
- Pepper - 1/4 teaspoon
- Parmesan cheese - 30 grams, grated (optional)
Steps
- Preheat your BBQ grill to medium heat.
- In a bowl, combine the diced zucchini, eggplant, bell pepper, red onion, garlic, and tomato.
- Drizzle the vegetables with olive oil, and sprinkle with salt, pepper, thyme, and half of the chopped basil. Toss to coat evenly.
- Place the vegetable mixture in a grilling basket or wrap in aluminum foil to create a packet.
- Grill the vegetable packet for about 15-20 minutes, stirring occasionally, until the vegetables are tender and slightly charred.
- While the vegetables are grilling, place the flatbreads on the grill for about 2-3 minutes on each side until they are warmed and have grill marks.
- Remove the grilled vegetables from the BBQ and spread them evenly over the flatbreads.
- Sprinkle the remaining basil and Parmesan cheese over the top, if using.
- Serve immediately, cut into slices.
