  • Red bell pepper - 100 grams
  • Cherry tomatoes - 100 grams
  • Seaweed flakes - 2 teaspoons
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves
  • Onion - 1 small
  • Fresh basil - 10 grams
  • Lemon juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Plant-based shrimp (or tofu) - 100 grams

Steps

  1. Dice the zucchini, eggplant, and red bell pepper into small cubes.
  2. Chop the onion and mince the garlic.
  3. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, sautéing until translucent.
  4. Add the zucchini, eggplant, and red bell pepper to the skillet. Cook for about 10 minutes, stirring occasionally, until the vegetables are tender.
  5. Stir in the cherry tomatoes, seaweed flakes, salt, and black pepper. Cook for another 5 minutes until the tomatoes start to soften.
  6. If using plant-based shrimp or tofu, add it to the skillet and cook for an additional 5-7 minutes until heated through.
  7. Finish the dish by adding freshly chopped basil and lemon juice. Stir well to combine.
  8. Serve hot, garnished with additional basil if desired.
