- Seaweed flakes - 2 teaspoons
- Olive oil - 2 tablespoons
- Garlic - 2 cloves
- Onion - 1 small
- Fresh basil - 10 grams
- Lemon juice - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Plant-based shrimp (or tofu) - 100 grams
Steps
- Dice the zucchini, eggplant, and red bell pepper into small cubes.
- Chop the onion and mince the garlic.
- In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, sautéing until translucent.
- Add the zucchini, eggplant, and red bell pepper to the skillet. Cook for about 10 minutes, stirring occasionally, until the vegetables are tender.
- Stir in the cherry tomatoes, seaweed flakes, salt, and black pepper. Cook for another 5 minutes until the tomatoes start to soften.
- If using plant-based shrimp or tofu, add it to the skillet and cook for an additional 5-7 minutes until heated through.
- Finish the dish by adding freshly chopped basil and lemon juice. Stir well to combine.
- Serve hot, garnished with additional basil if desired.
