- Garlic - 2 cloves, minced
- Tomato - 1 large, diced (about 150g)
- Olive oil - 2 tablespoons
- Fresh basil - 10 leaves, chopped
- Thyme - 1 teaspoon, dried
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Wash and dice the zucchini, eggplant, red bell pepper, and tomato into small cubes. Chop the onion and mince the garlic.
- Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent, about 5 minutes.
- Add the diced eggplant to the skillet and cook for an additional 5 minutes, stirring occasionally until it starts to soften.
- Stir in the diced zucchini and red bell pepper, and cook for another 10 minutes, until all vegetables are tender.
- Add the diced tomato, dried thyme, salt, and black pepper to the skillet. Mix well and let it simmer for about 10 minutes, allowing the flavors to meld together.
- Remove from heat and stir in the chopped fresh basil. Adjust seasoning if necessary, and serve warm.
