  • Yellow onion - 1 medium (about 100g)
  • Garlic - 2 cloves, minced
  • Tomato - 1 large, diced (about 150g)
  • Olive oil - 2 tablespoons
  • Fresh basil - 10 leaves, chopped
  • Thyme - 1 teaspoon, dried
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Wash and dice the zucchini, eggplant, red bell pepper, and tomato into small cubes. Chop the onion and mince the garlic.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent, about 5 minutes.
  3. Add the diced eggplant to the skillet and cook for an additional 5 minutes, stirring occasionally until it starts to soften.
  4. Stir in the diced zucchini and red bell pepper, and cook for another 10 minutes, until all vegetables are tender.
  5. Add the diced tomato, dried thyme, salt, and black pepper to the skillet. Mix well and let it simmer for about 10 minutes, allowing the flavors to meld together.
  6. Remove from heat and stir in the chopped fresh basil. Adjust seasoning if necessary, and serve warm.
