Ingredients

  • Zucchini - 1 medium (about 200g)
  • Eggplant - 1 small (about 150g)
  • Red bell pepper - 1 medium (about 150g)
  • Yellow bell pepper - 1 medium (about 150g)
  • Tomatoes - 3 medium (about 400g), chopped
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Olive oil - 2 tablespoons
  • Dried thyme - 1 teaspoon
  • Dried basil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Preheat your oven to 190°C (375°F).
  2. Slice the zucchini and eggplant into thin rounds, and the bell peppers into strips.
  3. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion is translucent, about 3-4 minutes.
  4. Add the chopped tomatoes to the skillet along with dried thyme, dried basil, salt, and pepper. Cook for another 5-7 minutes until the mixture thickens slightly.
  5. In a baking dish, spread the tomato mixture evenly on the bottom.
  6. Layer the sliced zucchini, eggplant, and bell peppers alternately and vertically over the tomato sauce in a pattern.
  7. Drizzle the remaining tablespoon of olive oil over the arranged vegetables, and season with additional salt and pepper if desired.
  8. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  9. Remove the foil and bake for an additional 10-15 minutes, until the vegetables are tender and slightly caramelized.
