  • Wild boar meat - 400 grams, cubed

  • Garlic - 2 cloves, minced
  • Carrots - 2 medium, sliced
  • Celery - 2 stalks, chopped
  • Mushrooms - 150 grams, sliced
  • Dried thyme - 1 teaspoon
  • Bay leaves - 2
  • Red wine (optional) - 100 ml
  • Chicken or vegetable broth - 300 ml
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and minced garlic, sautéing until translucent, about 5 minutes.
  3. Add the cubed wild boar meat to the pot, browning on all sides, about 10 minutes.
  4. Stir in the sliced carrots, chopped celery, and mushrooms, cooking for another 5 minutes.
  5. Add the dried thyme, bay leaves, salt, and black pepper, mixing well.
  6. Pour in the red wine (if using) and scrape any browned bits from the bottom of the pot.
  7. Add the chicken or vegetable broth, bring to a simmer, then reduce heat to low.
  8. Cover and let the ragoût cook for about 1.5 hours, stirring occasionally, until the meat is tender.
  9. Adjust seasoning to taste before serving.
