- Wild boar meat - 400 grams, cubed

- Garlic - 2 cloves, minced
- Carrots - 2 medium, sliced
- Celery - 2 stalks, chopped
- Mushrooms - 150 grams, sliced
- Dried thyme - 1 teaspoon
- Bay leaves - 2
- Red wine (optional) - 100 ml
- Chicken or vegetable broth - 300 ml
- Salt - to taste
- Black pepper - to taste
Steps
- Heat the olive oil in a large pot over medium heat.
- Add the diced onion and minced garlic, sautéing until translucent, about 5 minutes.
- Add the cubed wild boar meat to the pot, browning on all sides, about 10 minutes.
- Stir in the sliced carrots, chopped celery, and mushrooms, cooking for another 5 minutes.
- Add the dried thyme, bay leaves, salt, and black pepper, mixing well.
- Pour in the red wine (if using) and scrape any browned bits from the bottom of the pot.
- Add the chicken or vegetable broth, bring to a simmer, then reduce heat to low.
- Cover and let the ragoût cook for about 1.5 hours, stirring occasionally, until the meat is tender.
- Adjust seasoning to taste before serving.
