  • Carrots - 2 medium, sliced
  • Potato - 1 large, diced
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Chicken broth - 300 ml (gluten-free)
  • Thyme - 1 teaspoon, dried
  • Bay leaf - 1
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Parsley - 1 tablespoon, chopped (for garnish)

Steps

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, sauté until the onion is translucent, about 5 minutes.
  3. Increase the heat to medium-high and add the pork cubes. Brown the meat on all sides, about 8-10 minutes.
  4. Stir in the sliced carrots and diced potato, cooking for an additional 5 minutes.
  5. Pour in the chicken broth, then add the thyme, bay leaf, salt, and black pepper. Bring to a boil.
  6. Reduce the heat to low, cover the pot, and let it simmer for about 60 minutes, stirring occasionally.
  7. After 60 minutes, check the pork for tenderness. If not tender, continue to simmer until the meat is fork-tender.
  8. Remove the bay leaf before serving and garnish with chopped parsley.
