- Carrots - 2 medium, sliced
- Potato - 1 large, diced
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Chicken broth - 300 ml (gluten-free)
- Thyme - 1 teaspoon, dried
- Bay leaf - 1
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Parsley - 1 tablespoon, chopped (for garnish)
Steps
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, sauté until the onion is translucent, about 5 minutes.
- Increase the heat to medium-high and add the pork cubes. Brown the meat on all sides, about 8-10 minutes.
- Stir in the sliced carrots and diced potato, cooking for an additional 5 minutes.
- Pour in the chicken broth, then add the thyme, bay leaf, salt, and black pepper. Bring to a boil.
- Reduce the heat to low, cover the pot, and let it simmer for about 60 minutes, stirring occasionally.
- After 60 minutes, check the pork for tenderness. If not tender, continue to simmer until the meat is fork-tender.
- Remove the bay leaf before serving and garnish with chopped parsley.
