  • Celery - 1 stalk, diced
  • Tomatoes - 2 medium, diced
  • Fish stock - 500 ml
  • White wine - 100 ml
  • Bay leaf - 1
  • Thyme - 1 teaspoon, dried
  • Saffron - a pinch
  • Cod fillet - 150 grams, cut into chunks
  • Shrimp - 100 grams, peeled and deveined
  • Mussels - 100 grams, cleaned
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the shallots and garlic, sautéing until translucent.
  2. Add the diced carrot and celery, cooking for another 5 minutes until softened.
  3. Stir in the diced tomatoes, fish stock, white wine, bay leaf, thyme, and saffron. Bring to a simmer.
  4. Add the cod chunks to the pot and cook for about 5 minutes, allowing the fish to cook through.
  5. Add the shrimp and mussels, cooking for an additional 5-7 minutes until the shrimp are pink and the mussels have opened.
  6. Season the ragoût with salt and black pepper to taste. Remove the bay leaf before serving.
  7. Ladle the ragoût into bowls and garnish with fresh parsley. Serve hot.
