- Carrots - 2 medium, sliced
- Potato - 1 medium, diced
- Celery - 1 stalk, chopped
- Tomato paste - 1 tablespoon
- Red wine - 100 ml (optional, replace with broth for halal)
- Beef or lamb broth - 500 ml
- Thyme - 1 teaspoon, dried
- Bay leaf - 1
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the lamb cubes and sear until browned on all sides, about 5-7 minutes.
- Remove the lamb from the pot and set aside. In the same pot, add the chopped onion, garlic, carrots, and celery. Sauté for 5 minutes until the vegetables soften.
- Stir in the tomato paste and cook for an additional minute, then add the optional red wine and let it simmer for 2-3 minutes to reduce slightly.
- Return the lamb to the pot along with the diced potato, broth, thyme, bay leaf, salt, and black pepper. Bring the mixture to a boil, then reduce the heat to low.
- Cover the pot and let it simmer gently for 1.5 hours, or until the lamb is tender and the flavors are well combined, stirring occasionally.
- Once cooked, remove the bay leaf and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
