- Vegetable broth - 500 milliliters
- Bay leaf - 1
- Thyme - 1 teaspoon, dried
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Rinse the lentils under cold water and set aside.
- In a medium pot, heat olive oil over medium heat and add the chopped onion, sautéing until translucent, about 5 minutes.
- Add the diced carrot and celery to the pot, cooking for another 5 minutes until softened.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the tomato paste, stirring well to combine with the vegetables.
- Pour in the vegetable broth and add the rinsed lentils, bay leaf, and dried thyme.
- Bring the mixture to a boil, then reduce the heat to low and let it simmer uncovered for about 30 minutes, or until the lentils are tender.
- Season with salt and black pepper to taste, and remove the bay leaf before serving.
- Serve hot, garnished with freshly chopped parsley.
