  • Garlic - 2 cloves, minced
  • Tomato paste - 1 tablespoon
  • Vegetable broth - 500 milliliters
  • Bay leaf - 1
  • Thyme - 1 teaspoon, dried
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse the lentils under cold water and set aside.
  2. In a medium pot, heat olive oil over medium heat and add the chopped onion, sautéing until translucent, about 5 minutes.
  3. Add the diced carrot and celery to the pot, cooking for another 5 minutes until softened.
  4. Stir in the minced garlic and cook for an additional minute until fragrant.
  5. Add the tomato paste, stirring well to combine with the vegetables.
  6. Pour in the vegetable broth and add the rinsed lentils, bay leaf, and dried thyme.
  7. Bring the mixture to a boil, then reduce the heat to low and let it simmer uncovered for about 30 minutes, or until the lentils are tender.
  8. Season with salt and black pepper to taste, and remove the bay leaf before serving.
  9. Serve hot, garnished with freshly chopped parsley.
