  • Green or brown lentils - 150 grams
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Onion - 1 small, chopped
  • Garlic - 2 cloves, minced
  • Tomato paste - 2 tablespoons
  • Vegetable broth - 500 ml
  • Bay leaf - 1
  • Thyme - 1 teaspoon, dried
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse the lentils under cold water and set aside.
  2. In a medium pot, heat the olive oil over medium heat.
  3. Add the chopped onion, diced carrot, and diced celery to the pot, and sauté for about 5 minutes until the vegetables are softened.
  4. Stir in the minced garlic and cook for an additional minute until fragrant.
  5. Add the rinsed lentils, tomato paste, vegetable broth, bay leaf, and dried thyme to the pot.
  6. Bring the mixture to a boil, then reduce the heat to low, cover, and let simmer for about 25-30 minutes, or until the lentils are tender.
  7. Season with salt and black pepper to taste.
  8. Remove the bay leaf, and serve hot, garnished with fresh parsley.
