- Green or brown lentils - 150 grams
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Onion - 1 small, chopped
- Garlic - 2 cloves, minced
- Tomato paste - 2 tablespoons
- Vegetable broth - 500 ml
- Bay leaf - 1
- Thyme - 1 teaspoon, dried
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Rinse the lentils under cold water and set aside.
- In a medium pot, heat the olive oil over medium heat.
- Add the chopped onion, diced carrot, and diced celery to the pot, and sauté for about 5 minutes until the vegetables are softened.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the rinsed lentils, tomato paste, vegetable broth, bay leaf, and dried thyme to the pot.
- Bring the mixture to a boil, then reduce the heat to low, cover, and let simmer for about 25-30 minutes, or until the lentils are tender.
- Season with salt and black pepper to taste.
- Remove the bay leaf, and serve hot, garnished with fresh parsley.
