- Carrot - 1 medium, sliced
- Celery stalk - 1, chopped
- Mushrooms - 150 grams, sliced
- White wine - 150 ml
- Chicken broth - 200 ml
- Thyme - 1 teaspoon, dried
- Bay leaf - 1
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Heat the olive oil in a large pot over medium heat.
- Season the rabbit legs with salt and pepper, then brown them in the pot for about 5 minutes on each side until golden.
- Remove the rabbit from the pot and set aside.
- In the same pot, add the chopped onion, garlic, carrot, and celery. Sauté for about 5-7 minutes until the vegetables are softened.
- Add the sliced mushrooms and cook for an additional 3 minutes.
- Pour in the white wine, scraping the bottom of the pot to release any browned bits, and let it simmer for about 2-3 minutes until slightly reduced.
- Return the rabbit to the pot, then add the chicken broth, thyme, bay leaf, and adjust seasoning with salt and pepper.
- Bring the mixture to a gentle boil, then reduce the heat to low, cover, and let it simmer for 60 minutes until the rabbit is tender.
- Remove the bay leaf and serve the ragoût hot, garnished with fresh parsley.
