Ingredients

  • Rabbit legs - 300 grams

  • Onion - 1 medium, chopped
  • Carrot - 1 medium, sliced
  • Celery stalk - 1, chopped
  • Mushrooms - 150 grams, sliced
  • White wine - 150 ml
  • Chicken broth - 200 ml
  • Thyme - 1 teaspoon, dried
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Season the rabbit legs with salt and pepper, then brown them in the pot for about 5 minutes on each side until golden.
  3. Remove the rabbit from the pot and set aside.
  4. In the same pot, add the chopped onion, garlic, carrot, and celery. Sauté for about 5-7 minutes until the vegetables are softened.
  5. Add the sliced mushrooms and cook for an additional 3 minutes.
  6. Pour in the white wine, scraping the bottom of the pot to release any browned bits, and let it simmer for about 2-3 minutes until slightly reduced.
  7. Return the rabbit to the pot, then add the chicken broth, thyme, bay leaf, and adjust seasoning with salt and pepper.
  8. Bring the mixture to a gentle boil, then reduce the heat to low, cover, and let it simmer for 60 minutes until the rabbit is tender.
  9. Remove the bay leaf and serve the ragoût hot, garnished with fresh parsley.
