- Vegetable broth - 300 ml
- Thyme - 1 teaspoon, dried
- Bay leaf - 1 leaf
- Salt - to taste
- Black pepper - to taste

Steps
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 5 minutes.
- Stir in the diced zucchini, sliced carrot, diced bell pepper, and diced eggplant. Cook for another 5-7 minutes, stirring occasionally.
- Add the chopped tomatoes, vegetable broth, dried thyme, bay leaf, salt, and black pepper.
