  • Celery - 1 stalk, diced
  • Tomatoes (fresh) - 2, diced
  • Fish stock - 250 ml
  • White wine - 100 ml
  • Thyme - 1 teaspoon, fresh
  • Bay leaf - 1
  • Parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Heavy cream - 50 ml

Steps

  1. In a large saucepan, melt the butter over medium heat.
  2. Add the shallots and garlic, sautéing until they are translucent.
  3. Stir in the diced carrot and celery, cooking for about 5 minutes until softened.
  4. Add the diced tomatoes, fish stock, white wine, thyme, and bay leaf. Bring to a simmer.
  5. Let the mixture simmer for 10 minutes to allow the flavors to meld.
  6. Add the diced lobster to the pot and gently stir to combine.
  7. Pour in the heavy cream, stirring well, and cook for an additional 5 minutes until heated through.
  8. Season with salt and black pepper to taste, and remove the bay leaf.
  9. Serve hot, garnished with chopped parsley.
