- Fish stock - 250 ml
- White wine - 100 ml
- Thyme - 1 teaspoon, fresh
- Bay leaf - 1
- Parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Heavy cream - 50 ml
Steps
- In a large saucepan, melt the butter over medium heat.
- Add the shallots and garlic, sautéing until they are translucent.
- Stir in the diced carrot and celery, cooking for about 5 minutes until softened.
- Add the diced tomatoes, fish stock, white wine, thyme, and bay leaf. Bring to a simmer.
- Let the mixture simmer for 10 minutes to allow the flavors to meld.
- Add the diced lobster to the pot and gently stir to combine.
- Pour in the heavy cream, stirring well, and cook for an additional 5 minutes until heated through.
- Season with salt and black pepper to taste, and remove the bay leaf.
- Serve hot, garnished with chopped parsley.
