- Canned diced tomatoes - 400 grams
- Vegetable broth - 500 milliliters
- Mixed dried herbs (thyme, rosemary, oregano) - 1 teaspoon
- Canned mixed beans (e.g., kidney, cannellini, chickpeas) - 400 grams, drained and rinsed
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish, chopped
Steps
- Heat olive oil in a large pot over medium heat. Add diced onion, carrot, and celery, and sauté for about 5 minutes until softened.
- Add minced garlic and sauté for another minute until fragrant.
- Stir in the diced zucchini and bell pepper, cooking for an additional 5 minutes.
- Pour in the canned diced tomatoes and vegetable broth, and bring to a simmer.
- Add the mixed dried herbs, drained beans, salt, and black pepper. Stir well to combine.
- Reduce the heat to low and cover the pot. Let it simmer for 20-25 minutes, stirring occasionally.
