  • Vegetable broth - 500 milliliters
  • Mixed dried herbs (thyme, rosemary, oregano) - 1 teaspoon
  • Canned mixed beans (e.g., kidney, cannellini, chickpeas) - 400 grams, drained and rinsed
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish, chopped

Steps

  1. Heat olive oil in a large pot over medium heat. Add diced onion, carrot, and celery, and sauté for about 5 minutes until softened.
  2. Add minced garlic and sauté for another minute until fragrant.
  3. Stir in the diced zucchini and bell pepper, cooking for an additional 5 minutes.
  4. Pour in the canned diced tomatoes and vegetable broth, and bring to a simmer.
  5. Add the mixed dried herbs, drained beans, salt, and black pepper. Stir well to combine.
