- Duck legs - 2 pieces (about 500g total)
- Carrots - 2 medium, sliced
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Celery - 1 stalk, chopped
- Mushrooms - 150g, sliced
- Tomato paste - 2 tablespoons
- Red wine - 200ml
- Chicken or vegetable broth - 250ml
- Thyme - 1 teaspoon, dried
- Bay leaf - 1
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Parsley - for garnish, chopped
Steps
- Heat the olive oil in a large pot over medium heat. Season the duck legs with salt and pepper, then brown them in the pot for about 5-7 minutes on each side until golden. Remove the duck and set aside.
- In the same pot, add the chopped onion, garlic, carrots, and celery. Sauté for about 5 minutes until the vegetables are softened.
- Add the sliced mushrooms and cook for another 3-4 minutes until they release their moisture.
- Stir in the tomato paste, then pour in the red wine. Scrape up any browned bits from the bottom of the pot and let the wine reduce for about 5 minutes.
- Return the duck legs to the pot, then add the broth, thyme, and bay leaf. Bring to a simmer, cover, and let it cook on low heat for about 1 hour 15 minutes, or until the duck is tender.
- Once cooked, remove the duck legs and let them rest for a few minutes. Discard the bay leaf, then check the seasoning and adjust with salt and pepper if needed.
- Serve the ragoût in bowls, topped with the duck legs and garnished with chopped parsley.
