- Beef chuck - 400 grams, cut into 2.5 cm cubes
- Olive oil - 2 tablespoons
- Onion - 1 medium, diced
- Carrots - 2 medium, sliced
- Celery - 1 stalk, diced
- Garlic - 2 cloves, minced
- Red wine - 150 ml
- Beef broth - 400 ml (low sodium)
- Tomato paste - 2 tablespoons
- Bay leaves - 2
- Thyme - 1 teaspoon, dried
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Parsley - 1 tablespoon, chopped, for garnish
Steps
- In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef cubes and brown on all sides, about 5-7 minutes. Remove the beef and set aside.
- In the same pot, add the diced onion, sliced carrots, and diced celery. Sauté for about 5 minutes, until the vegetables are softened.
- Add the minced garlic and cook for another minute until fragrant.
- Pour in the red wine, scraping the bottom of the pot to deglaze. Let it simmer for 2-3 minutes.
- Stir in the tomato paste, beef broth, bay leaves, thyme, salt, and black pepper. Return the browned beef to the pot.
- Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 1.5 hours, stirring occasionally, until the beef is tender.
- Remove the bay leaves before serving. Garnish with chopped parsley and serve hot.
