Ingredients

  • Beef chuck - 400 grams, cut into 2.5 cm cubes
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Carrots - 2 medium, sliced
  • Celery - 1 stalk, diced
  • Garlic - 2 cloves, minced
  • Red wine - 150 ml
  • Beef broth - 400 ml (low sodium)
  • Tomato paste - 2 tablespoons
  • Bay leaves - 2
  • Thyme - 1 teaspoon, dried
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Parsley - 1 tablespoon, chopped, for garnish

Steps

  1. In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef cubes and brown on all sides, about 5-7 minutes. Remove the beef and set aside.
  2. In the same pot, add the diced onion, sliced carrots, and diced celery. Sauté for about 5 minutes, until the vegetables are softened.
  3. Add the minced garlic and cook for another minute until fragrant.
  4. Pour in the red wine, scraping the bottom of the pot to deglaze. Let it simmer for 2-3 minutes.
  5. Stir in the tomato paste, beef broth, bay leaves, thyme, salt, and black pepper. Return the browned beef to the pot.
  6. Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 1.5 hours, stirring occasionally, until the beef is tender.
  7. Remove the bay leaves before serving. Garnish with chopped parsley and serve hot.
