- Radishes - 300 grams
- Zucchini - 150 grams
- Bell pepper (red) - 1 medium
- Cherry tomatoes - 150 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Fresh basil - 10 leaves, chopped
- Parmesan cheese - 30 grams, grated
- Salt - to taste
- Black pepper - to taste
Steps
- Wash and spiralize the radishes using a spiralizer or a vegetable peeler to create thin noodles.
- Trim the ends of the zucchini and spiralize it as well, creating zucchini noodles.
- Slice the bell pepper into thin strips and halve the cherry tomatoes.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the bell pepper and cherry tomatoes to the skillet and cook for 3-4 minutes until they start to soften.
- Stir in the spiralized radishes and zucchini, and cook for another 5-7 minutes until the vegetables are tender but still crisp.
- Season with salt and black pepper to taste, then stir in chopped basil.
- Remove from heat and serve topped with grated Parmesan cheese.
