- Pork loin - 500 grams
- Garlic - 4 cloves, minced
- Fresh thyme - 2 teaspoons, chopped
- Fresh rosemary - 2 teaspoons, chopped
- Olive oil - 2 tablespoons
- Dijon mustard - 1 tablespoon
- Honey - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Vegetables (zucchini, bell pepper, onion) - 300 grams, chopped
Steps
- In a bowl, mix garlic, thyme, rosemary, olive oil, Dijon mustard, honey, salt, and black pepper to create a marinade.
- Coat the pork loin evenly with the marinade, cover, and refrigerate for at least 1 hour, preferably overnight.
- Preheat the BBQ grill to medium-high heat.
- Remove the pork loin from the marinade and place it on the grill. Grill for about 25-30 minutes, turning occasionally until it reaches an internal temperature of 70°C (160°F).
- In the last 10 minutes of grilling, add the chopped vegetables to the grill, seasoning them with salt and pepper.
- Once the pork is cooked, remove it from the grill, cover it with foil, and let it rest for 10 minutes before slicing.
- Serve the sliced pork with the grilled vegetables on the side.
