Ingredients

  • Pork loin - 500 grams
  • Garlic - 4 cloves, minced
  • Fresh thyme - 2 teaspoons, chopped
  • Fresh rosemary - 2 teaspoons, chopped
  • Olive oil - 2 tablespoons
  • Dijon mustard - 1 tablespoon
  • Honey - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetables (zucchini, bell pepper, onion) - 300 grams, chopped

Steps

  1. In a bowl, mix garlic, thyme, rosemary, olive oil, Dijon mustard, honey, salt, and black pepper to create a marinade.
  2. Coat the pork loin evenly with the marinade, cover, and refrigerate for at least 1 hour, preferably overnight.
  3. Preheat the BBQ grill to medium-high heat.
  4. Remove the pork loin from the marinade and place it on the grill. Grill for about 25-30 minutes, turning occasionally until it reaches an internal temperature of 70°C (160°F).
  5. In the last 10 minutes of grilling, add the chopped vegetables to the grill, seasoning them with salt and pepper.
  6. Once the pork is cooked, remove it from the grill, cover it with foil, and let it rest for 10 minutes before slicing.
  7. Serve the sliced pork with the grilled vegetables on the side.
