- All-purpose flour - 150 grams
- Vegan butter - 75 grams
- Cold water - 3 tablespoons
- Firm tofu - 200 grams
- Nutritional yeast - 2 tablespoons
- Turmeric powder - 1/2 teaspoon
- Garlic powder - 1/2 teaspoon
- Onion powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Spinach - 100 grams, chopped
- Cherry tomatoes - 100 grams, halved
- Red bell pepper - 50 grams, diced
- Olive oil - 1 tablespoon
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine the all-purpose flour and vegan butter, then mix until crumbly.
- Add cold water, one tablespoon at a time, mixing until a dough forms. Wrap in plastic wrap and refrigerate for 30 minutes.
- In a blender, combine the firm tofu, nutritional yeast, turmeric, garlic powder, onion powder, salt, and black pepper. Blend until smooth and creamy.
- In a skillet, heat the olive oil over medium heat. Sauté the chopped spinach, red bell pepper, and halved cherry tomatoes for about 5 minutes until softened.
- Remove the skillet from heat and mix the sautéed vegetables into the tofu mixture until well combined.
- Roll out the chilled dough on a floured surface and place it into a tart pan, pressing it evenly into the base and sides.
- Pour the tofu and vegetable mixture into the crust, spreading it evenly.
- Bake in the preheated oven for 30 minutes, or until the top is slightly golden.
- Allow to cool for a few minutes before slicing and serving.
