Ingredients

  • All-purpose flour - 150 grams
  • Vegan butter - 75 grams
  • Cold water - 3 tablespoons
  • Firm tofu - 200 grams
  • Nutritional yeast - 2 tablespoons
  • Turmeric powder - 1/2 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Onion powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Spinach - 100 grams, chopped
  • Cherry tomatoes - 100 grams, halved
  • Red bell pepper - 50 grams, diced
  • Olive oil - 1 tablespoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine the all-purpose flour and vegan butter, then mix until crumbly.
  3. Add cold water, one tablespoon at a time, mixing until a dough forms. Wrap in plastic wrap and refrigerate for 30 minutes.
  4. In a blender, combine the firm tofu, nutritional yeast, turmeric, garlic powder, onion powder, salt, and black pepper. Blend until smooth and creamy.
  5. In a skillet, heat the olive oil over medium heat. Sauté the chopped spinach, red bell pepper, and halved cherry tomatoes for about 5 minutes until softened.
  6. Remove the skillet from heat and mix the sautéed vegetables into the tofu mixture until well combined.
  7. Roll out the chilled dough on a floured surface and place it into a tart pan, pressing it evenly into the base and sides.
  8. Pour the tofu and vegetable mixture into the crust, spreading it evenly.
  9. Bake in the preheated oven for 30 minutes, or until the top is slightly golden.
  10. Allow to cool for a few minutes before slicing and serving.
