Ingredients

  • Chickpea flour - 120 grams
  • Water - 250 milliliters
  • Olive oil - 2 tablespoons
  • Nutritional yeast - 2 tablespoons
  • Spinach - 100 grams, chopped
  • Red bell pepper - 1, diced
  • Zucchini - 1 small, grated
  • Yellow onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Turmeric powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, combine chickpea flour, water, olive oil, nutritional yeast, turmeric, salt, and black pepper. Whisk until smooth and set aside.
  3. In a skillet, heat a little olive oil over medium heat. Sauté the diced onion and garlic until translucent, about 3-4 minutes.
  4. Add the diced red bell pepper and grated zucchini to the skillet, cooking for another 5 minutes until softened.
  5. Stir in the chopped spinach and cook until wilted, about 2 minutes. Remove from heat and let cool slightly.
  6. Fold the vegetable mixture into the chickpea batter, adding the chopped parsley for extra flavor.
  7. Pour the mixture into a greased pie dish or tart pan, smoothing the top.
  8. Bake in the preheated oven for 30 minutes, or until the quiche is firm and slightly golden on top.
  9. Allow to cool for a few minutes before slicing. Serve warm or chilled.
