- Chickpea flour - 120 grams
- Water - 250 milliliters
- Olive oil - 2 tablespoons
- Nutritional yeast - 2 tablespoons
- Spinach - 100 grams, chopped
- Red bell pepper - 1, diced
- Zucchini - 1 small, grated
- Yellow onion - 1 small, diced
- Garlic - 2 cloves, minced
- Turmeric powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat your oven to 180°C (350°F).
- In a mixing bowl, combine chickpea flour, water, olive oil, nutritional yeast, turmeric, salt, and black pepper. Whisk until smooth and set aside.
- In a skillet, heat a little olive oil over medium heat. Sauté the diced onion and garlic until translucent, about 3-4 minutes.
- Add the diced red bell pepper and grated zucchini to the skillet, cooking for another 5 minutes until softened.
- Stir in the chopped spinach and cook until wilted, about 2 minutes. Remove from heat and let cool slightly.
- Fold the vegetable mixture into the chickpea batter, adding the chopped parsley for extra flavor.
- Pour the mixture into a greased pie dish or tart pan, smoothing the top.
- Bake in the preheated oven for 30 minutes, or until the quiche is firm and slightly golden on top.
- Allow to cool for a few minutes before slicing. Serve warm or chilled.
