- Garlic - 2 cloves, minced
- Red bell pepper - 1 small, diced
- Spinach - 100 grams, fresh
- Turmeric powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat your oven to 180°C (350°F).
- In a mixing bowl, combine the chickpea flour, nutritional yeast, turmeric powder, salt, and black pepper.
- Gradually whisk in the water until the batter is smooth and well combined.
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent, about 3-4 minutes.
- Add the diced red bell pepper and fresh spinach to the skillet, cooking until the spinach wilts, about 2-3 minutes.
- Remove the skillet from heat and stir the vegetable mixture into the chickpea batter. Mix until everything is well incorporated.
- Pour the batter into a greased baking dish or pie pan.
- Bake in the preheated oven for 20-25 minutes, or until the top is firm and lightly golden.
- Allow to cool slightly before slicing. Garnish with fresh parsley and serve warm.
