  • Water - 250 milliliters
  • Nutritional yeast - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1 small, diced
  • Spinach - 100 grams, fresh
  • Turmeric powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, combine the chickpea flour, nutritional yeast, turmeric powder, salt, and black pepper.
  3. Gradually whisk in the water until the batter is smooth and well combined.
  4. In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent, about 3-4 minutes.
  5. Add the diced red bell pepper and fresh spinach to the skillet, cooking until the spinach wilts, about 2-3 minutes.
  6. Remove the skillet from heat and stir the vegetable mixture into the chickpea batter. Mix until everything is well incorporated.
  7. Pour the batter into a greased baking dish or pie pan.
  8. Bake in the preheated oven for 20-25 minutes, or until the top is firm and lightly golden.
  9. Allow to cool slightly before slicing. Garnish with fresh parsley and serve warm.
