Ingredients

  • Shortcrust pastry - 1 sheet (about 200g)
  • Olive oil - 1 tablespoon
  • Onion - 1 medium, finely chopped
  • Garlic - 1 clove, minced
  • Zucchini - 1 small, diced
  • Red bell pepper - 1/2, diced
  • Mushrooms - 100g, sliced
  • Spinach - 50g, fresh
  • Eggs - 2 large
  • Milk - 100ml
  • Heavy cream - 50ml
  • Nutmeg - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Grated cheese (Gruyère or Emmental) - 50g

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Roll out the shortcrust pastry and line a 20cm tart pan. Prick the base with a fork and chill in the refrigerator for 10 minutes.
  3. In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  4. Add the garlic, zucchini, red bell pepper, and mushrooms to the skillet. Cook for an additional 5-7 minutes until the vegetables are tender. Stir in the spinach and cook until wilted. Remove from heat and let cool slightly.
  5. In a bowl, whisk together the eggs, milk, heavy cream, nutmeg, salt, and black pepper until well combined.
  6. Spread the sautéed vegetable mixture evenly over the pastry crust. Pour the egg mixture over the top, ensuring the vegetables are well distributed.
  7. Sprinkle the grated cheese evenly on top of the quiche.
  8. Bake in the preheated oven for 25-30 minutes, or until the filling is set and the top is golden brown.
  9. Remove from the oven and let cool for a few minutes before slicing. Serve warm or at room temperature.
