- Shortcrust pastry - 1 sheet (about 200g)
- Olive oil - 1 tablespoon
- Onion - 1 medium, finely chopped
- Garlic - 1 clove, minced
- Zucchini - 1 small, diced
- Red bell pepper - 1/2, diced
- Mushrooms - 100g, sliced
- Spinach - 50g, fresh
- Eggs - 2 large
- Milk - 100ml
- Heavy cream - 50ml
- Nutmeg - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Grated cheese (Gruyère or Emmental) - 50g
Steps
- Preheat the oven to 180°C (350°F).
- Roll out the shortcrust pastry and line a 20cm tart pan. Prick the base with a fork and chill in the refrigerator for 10 minutes.
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the garlic, zucchini, red bell pepper, and mushrooms to the skillet. Cook for an additional 5-7 minutes until the vegetables are tender. Stir in the spinach and cook until wilted. Remove from heat and let cool slightly.
- In a bowl, whisk together the eggs, milk, heavy cream, nutmeg, salt, and black pepper until well combined.
- Spread the sautéed vegetable mixture evenly over the pastry crust. Pour the egg mixture over the top, ensuring the vegetables are well distributed.
- Sprinkle the grated cheese evenly on top of the quiche.
- Bake in the preheated oven for 25-30 minutes, or until the filling is set and the top is golden brown.
- Remove from the oven and let cool for a few minutes before slicing. Serve warm or at room temperature.
