- Leeks - 2 medium, cleaned and sliced
- Eggs - 3 large
- Heavy cream - 150 ml
- Milk - 50 ml
- Grated Gruyère cheese - 100 g
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Nutmeg - a pinch
Steps
- Preheat your oven to 180°C (350°F).
- In a skillet, heat the olive oil over medium heat and add the sliced leeks. Cook for about 10 minutes until they are soft and translucent.
- While the leeks are cooking, roll out the shortcrust pastry and line a 20 cm (8 inch) tart pan. Prick the base with a fork and chill in the fridge for 15 minutes.
- In a mixing bowl, whisk together the eggs, heavy cream, milk, salt, black pepper, and nutmeg until well combined.
- Once the leeks are ready, spread them evenly over the pastry base and sprinkle the grated Gruyère cheese on top.
- Pour the egg mixture over the leeks and cheese, ensuring an even distribution.
- Bake in the preheated oven for 30-35 minutes, or until the filling is set and the top is lightly golden.
- Let the quiche cool for a few minutes before slicing and serving warm.
