Ingredients

  • Shortcrust pastry - 1 sheet (approximately 230g)
  • Leeks - 2 medium, cleaned and sliced
  • Eggs - 3 large
  • Heavy cream - 150 ml
  • Milk - 50 ml
  • Grated Gruyère cheese - 100 g
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Nutmeg - a pinch

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a skillet, heat the olive oil over medium heat and add the sliced leeks. Cook for about 10 minutes until they are soft and translucent.
  3. While the leeks are cooking, roll out the shortcrust pastry and line a 20 cm (8 inch) tart pan. Prick the base with a fork and chill in the fridge for 15 minutes.
  4. In a mixing bowl, whisk together the eggs, heavy cream, milk, salt, black pepper, and nutmeg until well combined.
  5. Once the leeks are ready, spread them evenly over the pastry base and sprinkle the grated Gruyère cheese on top.
  6. Pour the egg mixture over the leeks and cheese, ensuring an even distribution.
  7. Bake in the preheated oven for 30-35 minutes, or until the filling is set and the top is lightly golden.
  8. Let the quiche cool for a few minutes before slicing and serving warm.
