  • Shortcrust pastry - 200 grams
  • Fresh spinach - 100 grams
  • Seaweed (dried, such as nori or wakame) - 20 grams
  • Eggs - 3 large
  • Heavy cream - 150 ml
  • Milk - 50 ml
  • Grated cheese (Gruyère or similar) - 50 grams
  • Garlic - 1 clove, minced
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Roll out the shortcrust pastry and line a 20 cm tart pan, trimming any excess pastry from the edges.
  3. In a skillet, heat the olive oil over medium heat and sauté the minced garlic until fragrant.
  4. Add the fresh spinach to the skillet and cook until wilted, then remove from heat and let cool slightly.
  5. In a bowl, whisk together the eggs, heavy cream, milk, salt, and black pepper until well combined.
  6. Stir in the wilted spinach, rehydrated seaweed, and grated cheese into the egg mixture.
  7. Pour the filling into the prepared pastry shell, spreading it evenly.
  8. Bake in the preheated oven for 30-35 minutes, or until the quiche is set and lightly golden on top.
  9. Allow the quiche to cool for 5 minutes before slicing and serving.
