Ingredients

  • Almond flour - 50g
  • Egg whites - 2 large
  • Granulated sugar - 30g
  • Vanilla extract - 1/2 tsp
  • Heavy cream - 100ml
  • Milk - 100ml
  • Egg yolks - 2 large
  • Cornstarch - 15g
  • Powdered sugar - for dusting

Steps

  1. Preheat the oven to 160°C (320°F) and line a baking sheet with parchment paper.
  2. In a clean mixing bowl, whisk the egg whites until soft peaks form, then gradually add the granulated sugar while continuing to whisk until stiff peaks form.
  3. Gently fold in the almond flour and vanilla extract until just combined.
  4. Spoon or pipe the mixture onto the prepared baking sheet, creating small mounds (about 5cm in diameter) with a small indentation in the center.
  5. Bake for 20-25 minutes until lightly golden and firm to the touch. Allow to cool completely on a wire rack.
  6. While the shells cool, prepare the pastry cream: In a saucepan, heat the milk and heavy cream over medium heat until it begins to simmer.
  7. In a separate bowl, whisk together the egg yolks, cornstarch, and a little of the warm milk mixture until smooth.
  8. Slowly pour the egg mixture back into the saucepan, whisking continuously until the mixture thickens and bubbles. Remove from heat and stir in a drop of vanilla extract if desired.
  9. Once the pastry cream is cool, transfer it to a piping bag.
  10. Fill each meringue shell with the pastry cream and place the tops back on.
  11. Dust with powdered sugar before serving.
