- Almond flour - 50g
- Egg whites - 2 large
- Granulated sugar - 30g
- Vanilla extract - 1/2 tsp
- Heavy cream - 100ml
- Milk - 100ml
- Egg yolks - 2 large
- Cornstarch - 15g
- Powdered sugar - for dusting
Steps
- Preheat the oven to 160°C (320°F) and line a baking sheet with parchment paper.
- In a clean mixing bowl, whisk the egg whites until soft peaks form, then gradually add the granulated sugar while continuing to whisk until stiff peaks form.
- Gently fold in the almond flour and vanilla extract until just combined.
- Spoon or pipe the mixture onto the prepared baking sheet, creating small mounds (about 5cm in diameter) with a small indentation in the center.
- Bake for 20-25 minutes until lightly golden and firm to the touch. Allow to cool completely on a wire rack.
- While the shells cool, prepare the pastry cream: In a saucepan, heat the milk and heavy cream over medium heat until it begins to simmer.
- In a separate bowl, whisk together the egg yolks, cornstarch, and a little of the warm milk mixture until smooth.
- Slowly pour the egg mixture back into the saucepan, whisking continuously until the mixture thickens and bubbles. Remove from heat and stir in a drop of vanilla extract if desired.
- Once the pastry cream is cool, transfer it to a piping bag.
- Fill each meringue shell with the pastry cream and place the tops back on.
- Dust with powdered sugar before serving.
