  • Almond milk - 250 ml
  • Coconut cream - 100 ml
  • Cornstarch - 30 g
  • Maple syrup - 30 g
  • Vanilla extract - 1 tsp
  • Salt - a pinch
  • Dark chocolate (vegan) - 30 g
  • Fresh berries (for garnish) - a handful

Steps

  1. In a saucepan, combine the almond milk, coconut cream, cornstarch, maple syrup, vanilla extract, and a pinch of salt. Whisk until smooth.
  2. Heat the mixture over medium heat, continuously stirring until it thickens, about 10-12 minutes.
  3. Once thickened, remove from heat and add the dark chocolate. Stir until the chocolate is completely melted and incorporated.
  4. Pour the pudding into serving bowls and let it cool to room temperature.
  5. Refrigerate for at least 15 minutes to set further.
  6. Serve chilled, garnished with fresh berries.
