  • Cornstarch - 1 tablespoon
  • Cocoa powder - 1 tablespoon
  • Salt - a pinch

Steps

  1. In a saucepan, combine the chestnut puree, coconut milk, maple syrup, vanilla extract, cocoa powder, and a pinch of salt. Stir well to combine.
  2. In a small bowl, mix the cornstarch with 2 tablespoons of cold water to create a slurry.
  3. Heat the saucepan over medium heat, stirring continuously until the mixture begins to warm up.
  4. Once warm, add the cornstarch slurry to the mixture and continue to stir until it thickens, about 5-7 minutes.
  5. Remove from heat and pour the pudding into serving dishes.
  6. Let the pudding cool at room temperature for 10 minutes, then refrigerate for at least 2 hours before serving.
