  • baking powder - 1 teaspoon
  • salt - 1/4 teaspoon
  • coconut sugar - 50 grams
  • almond milk - 120 milliliters
  • coconut oil - 2 tablespoons (melted)
  • maple syrup - 100 milliliters
  • water - 100 milliliters
  • vanilla extract - 1 teaspoon

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, combine the coconut sugar, almond milk, melted coconut oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined; do not overmix.
  5. In a small saucepan, combine the maple syrup and water. Bring to a gentle simmer over medium heat.
  6. Pour the maple syrup mixture into a baking dish.
  7. Scoop spoonfuls of the batter onto the syrup mixture in the baking dish, leaving space between each scoop.
