Ingredients

  • 2 medium zucchini
  • 150 grams cherry tomatoes, halved
  • 100 grams feta cheese, crumbled
  • 50 grams black olives, pitted and chopped
  • 1 clove garlic, minced
  • 2 tablespoons fresh basil, chopped
  • 1 tablespoon fresh thyme, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Steps

  1. Preheat the BBQ grill to medium heat.
  2. Cut the zucchini in half lengthwise and scoop out the seeds to create a boat-like shape.
  3. In a mixing bowl, combine cherry tomatoes, feta cheese, black olives, minced garlic, basil, thyme, and olive oil. Season with salt and pepper.
  4. Spoon the filling into the hollowed zucchini halves, pressing down gently to pack it in.
  5. Place the stuffed zucchini on the grill and cook for about 15-20 minutes, or until the zucchini is tender and slightly charred.
  6. Remove from the grill and let them cool for a few minutes before serving.
