- Zucchini - 100 grams, grated
- Red bell pepper - 50 grams, finely chopped
- Red onion - 30 grams, finely chopped
- Garlic - 1 clove, minced
- Fresh parsley - 2 tablespoons, chopped
- Fresh thyme - 1 teaspoon, chopped
- Ground cumin - 1 teaspoon
- Olive oil - 1 tablespoon
- Breadcrumbs - 50 grams
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Whole wheat burger buns - 2
- Lettuce leaves - 2
- Tomato - 1, sliced
- Avocado - 1/2, sliced
Steps
- In a large mixing bowl, mash the cooked chickpeas with a fork until slightly chunky.
- Add the grated zucchini, chopped red bell pepper, red onion, garlic, parsley, thyme, cumin, olive oil, breadcrumbs, salt, and black pepper to the mashed chickpeas. Mix until well combined.
- Form the mixture into two patties, ensuring they hold together well.
- Heat a non-stick skillet over medium heat and add a drizzle of olive oil.
- Cook the patties for about 4-5 minutes on each side, or until golden brown and heated through.
- While the patties are cooking, lightly toast the whole wheat burger buns in a toaster or oven.
- Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the veggie patty, slices of tomato, and avocado.
