Ingredients

  • Chickpeas - 200 grams, cooked
  • Zucchini - 100 grams, grated
  • Red bell pepper - 50 grams, finely chopped
  • Red onion - 30 grams, finely chopped
  • Garlic - 1 clove, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh thyme - 1 teaspoon, chopped
  • Ground cumin - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Breadcrumbs - 50 grams
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Whole wheat burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1, sliced
  • Avocado - 1/2, sliced

Steps

  1. In a large mixing bowl, mash the cooked chickpeas with a fork until slightly chunky.
  2. Add the grated zucchini, chopped red bell pepper, red onion, garlic, parsley, thyme, cumin, olive oil, breadcrumbs, salt, and black pepper to the mashed chickpeas. Mix until well combined.
  3. Form the mixture into two patties, ensuring they hold together well.
  4. Heat a non-stick skillet over medium heat and add a drizzle of olive oil.
  5. Cook the patties for about 4-5 minutes on each side, or until golden brown and heated through.
  6. While the patties are cooking, lightly toast the whole wheat burger buns in a toaster or oven.
  7. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the veggie patty, slices of tomato, and avocado.
