Ingredients

  • Ground beef (80% lean) - 300 grams
  • Garlic - 2 cloves, minced
  • Fresh thyme - 1 teaspoon, chopped
  • Fresh rosemary - 1 teaspoon, chopped
  • Sea salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Goat cheese - 50 grams, crumbled
  • Romaine lettuce leaves - 4 large
  • Sliced tomatoes - 1 medium
  • Sliced red onion - 1/4 medium
  • Dijon mustard - 1 tablespoon

Steps

  1. In a mixing bowl, combine the ground beef, minced garlic, chopped thyme, chopped rosemary, sea salt, and black pepper. Mix until just combined.
  2. Divide the beef mixture into two equal portions and form them into patties, about 1.5 cm thick.
  3. Heat the olive oil in a skillet over medium-high heat. Once hot, add the patties and cook for about 4-5 minutes on each side, or until they reach your desired doneness.
  4. During the last minute of cooking, sprinkle the crumbled goat cheese on top of each patty and cover the skillet to melt the cheese slightly.
  5. While the patties are cooking, prepare the lettuce wraps by rinsing the romaine leaves and patting them dry.
  6. To assemble, place a beef patty on each lettuce leaf, top with sliced tomatoes and red onion, and drizzle with Dijon mustard.
