Ingredients

  • Chicken breast - 300 grams
  • Red bell pepper - 1 medium
  • Zucchini - 1 medium
  • Red onion - 1 small
  • Garlic - 2 cloves
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Dried thyme - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Wooden skewers - 4 (soaked in water for 30 minutes)

Steps

  1. Cut the chicken breast into 2.5 cm cubes and place them in a bowl.
  2. Chop the red bell pepper, zucchini, and red onion into similar-sized pieces to the chicken.
  3. In a small bowl, mix the minced garlic, olive oil, lemon juice, dried thyme, paprika, salt, and black pepper to create a marinade.
  4. Pour the marinade over the chicken and vegetables, ensuring they are well coated. Cover and let marinate for at least 15 minutes.
  5. Preheat the grill to medium-high heat.
  6. Thread the marinated chicken and vegetables onto the soaked wooden skewers, alternating between chicken and veggies.
  7. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  8. Remove from the grill and let rest for a couple of minutes before serving.
