Ingredients
- Chicken breast - 300 grams
- Red bell pepper - 1 medium
- Zucchini - 1 medium
- Red onion - 1 small
- Garlic - 2 cloves
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Dried thyme - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/2 teaspoon
- Wooden skewers - 4 (soaked in water for 30 minutes)
Steps
- Cut the chicken breast into 2.5 cm cubes and place them in a bowl.
- Chop the red bell pepper, zucchini, and red onion into similar-sized pieces to the chicken.
- In a small bowl, mix the minced garlic, olive oil, lemon juice, dried thyme, paprika, salt, and black pepper to create a marinade.
- Pour the marinade over the chicken and vegetables, ensuring they are well coated. Cover and let marinate for at least 15 minutes.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken and vegetables onto the soaked wooden skewers, alternating between chicken and veggies.
- Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- Remove from the grill and let rest for a couple of minutes before serving.
