  • Chicken thighs - 400 grams, boneless and skinless
  • Olive oil - 2 tablespoons
  • Shallots - 2, finely chopped
  • Garlic - 2 cloves, minced
  • Mushrooms - 200 grams, sliced (preferably cremini or button)
  • Dry white wine - 100 ml (optional for low-carb, can substitute with chicken broth)
  • Chicken broth - 100 ml
  • Fresh thyme - 1 teaspoon, chopped (or 1/2 teaspoon dried thyme)
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat the olive oil in a large skillet over medium heat.
  2. Season the chicken thighs with salt and black pepper, then add them to the skillet, cooking for about 5-6 minutes per side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the chopped shallots and sauté for 2-3 minutes until translucent.
  4. Add the minced garlic and sliced mushrooms to the skillet, cooking until the mushrooms are tender, about 5 minutes.
  5. Pour in the white wine (or chicken broth) and scrape the bottom of the skillet to deglaze, allowing it to simmer for 3-4 minutes.
  6. Add the chicken broth and thyme, stirring to combine. Return the chicken to the skillet, simmering for an additional 5 minutes to meld the flavors.
  7. Adjust seasoning with salt and black pepper as needed, then sprinkle with fresh parsley before serving.
