- Kosher salt - 1 tablespoon
- Black pepper - 1 teaspoon
- Fresh thyme - 2 sprigs
- Garlic cloves, minced - 4
- Olive oil - 2 tablespoons
- Lemon, halved - 1
- Carrots, chopped - 2
- Potatoes, chopped - 2 medium
- Onion, quartered - 1
Steps
- Preheat the oven to 220°C (425°F).
- Pat the chicken dry with paper towels and place it in a roasting pan.
- Rub the chicken all over with olive oil, then season generously with kosher salt and black pepper.
- Stuff the cavity of the chicken with the halved lemon, minced garlic, and fresh thyme.
- Arrange the chopped carrots, potatoes, and quartered onion around the chicken in the roasting pan.
- Roast in the preheated oven for about 75 minutes, or until the chicken's internal temperature reaches 75°C (165°F).
- Baste the chicken with the pan juices halfway through cooking.
- Once cooked, remove the chicken from the oven and let it rest for 10 minutes before carving.
- Serve the chicken with the roasted vegetables and drizzle with pan juices.
