Ingredients

  • Whole chicken (about 1 kg) - 1
  • Kosher salt - 1 tablespoon
  • Black pepper - 1 teaspoon
  • Fresh thyme - 2 sprigs
  • Garlic cloves, minced - 4
  • Olive oil - 2 tablespoons
  • Lemon, halved - 1
  • Carrots, chopped - 2
  • Potatoes, chopped - 2 medium
  • Onion, quartered - 1

Steps

  1. Preheat the oven to 220°C (425°F).
  2. Pat the chicken dry with paper towels and place it in a roasting pan.
  3. Rub the chicken all over with olive oil, then season generously with kosher salt and black pepper.
  4. Stuff the cavity of the chicken with the halved lemon, minced garlic, and fresh thyme.
  5. Arrange the chopped carrots, potatoes, and quartered onion around the chicken in the roasting pan.
  6. Roast in the preheated oven for about 75 minutes, or until the chicken's internal temperature reaches 75°C (165°F).
  7. Baste the chicken with the pan juices halfway through cooking.
  8. Once cooked, remove the chicken from the oven and let it rest for 10 minutes before carving.
  9. Serve the chicken with the roasted vegetables and drizzle with pan juices.
