- Chicken thighs - 400 grams, boneless and skinless
- Olive oil - 3 tablespoons
- Garlic - 3 cloves, minced
- Fresh thyme - 2 teaspoons, chopped
- Fresh rosemary - 2 teaspoons, chopped
- Dried oregano - 1 teaspoon
- Cherry tomatoes - 200 grams, halved
- Bell pepper - 1 medium, sliced
- Zucchini - 1 medium, sliced
- Black olives - 50 grams, pitted and sliced
- Salt - 1 teaspoon
- Black pepper - ½ teaspoon
- Lemon juice - 1 tablespoon
Steps
- In a bowl, combine the olive oil, minced garlic, thyme, rosemary, oregano, salt, and black pepper to create a marinade.
- Add the chicken thighs to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes.
- Preheat your oven to 200°C (400°F).
- In a large oven-safe skillet, heat a tablespoon of olive oil over medium heat. Add the marinated chicken thighs and sear for 5-7 minutes on each side until golden brown.
- Remove the chicken from the skillet and set aside. In the same skillet, add the cherry tomatoes, bell pepper, and zucchini, sautéing for about 5 minutes until they begin to soften.
- Return the chicken to the skillet, add the black olives, and drizzle with lemon juice.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 75°C (165°F).
- Remove from the oven and let it rest for a few minutes before serving. Enjoy!
