Ingredients

  • Chicken thighs - 400 grams, boneless and skinless
  • Olive oil - 3 tablespoons
  • Garlic - 3 cloves, minced
  • Fresh thyme - 2 teaspoons, chopped
  • Fresh rosemary - 2 teaspoons, chopped
  • Dried oregano - 1 teaspoon
  • Cherry tomatoes - 200 grams, halved
  • Bell pepper - 1 medium, sliced
  • Zucchini - 1 medium, sliced
  • Black olives - 50 grams, pitted and sliced
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Lemon juice - 1 tablespoon

Steps

  1. In a bowl, combine the olive oil, minced garlic, thyme, rosemary, oregano, salt, and black pepper to create a marinade.
  2. Add the chicken thighs to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes.
  3. Preheat your oven to 200°C (400°F).
  4. In a large oven-safe skillet, heat a tablespoon of olive oil over medium heat. Add the marinated chicken thighs and sear for 5-7 minutes on each side until golden brown.
  5. Remove the chicken from the skillet and set aside. In the same skillet, add the cherry tomatoes, bell pepper, and zucchini, sautéing for about 5 minutes until they begin to soften.
  6. Return the chicken to the skillet, add the black olives, and drizzle with lemon juice.
  7. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 75°C (165°F).
  8. Remove from the oven and let it rest for a few minutes before serving. Enjoy!
