Ingredients

  • chicken breast - 400 grams
  • olive oil - 3 tablespoons
  • garlic - 2 cloves, minced
  • fresh thyme - 1 tablespoon, chopped
  • fresh rosemary - 1 tablespoon, chopped
  • dried oregano - 1 teaspoon
  • lemon juice - 2 tablespoons
  • salt - 1 teaspoon
  • black pepper - 1/2 teaspoon
  • cherry tomatoes - 200 grams, halved
  • zucchini - 1 medium, sliced
  • bell pepper - 1 medium, sliced

Steps

  1. In a bowl, combine olive oil, minced garlic, thyme, rosemary, oregano, lemon juice, salt, and black pepper to make the marinade.
  2. Place the chicken breasts in the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  3. Preheat the grill to medium-high heat.
  4. Remove the chicken from the marinade and let any excess drip off.
  5. Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 75°C (165°F).
  6. While the chicken is grilling, toss the cherry tomatoes, zucchini, and bell pepper in a little olive oil, salt, and pepper.
  7. Add the vegetables to the grill during the last 5-7 minutes of cooking, turning occasionally until they are tender and slightly charred.
  8. Once cooked, remove the chicken and vegetables from the grill and let the chicken rest for 5 minutes before slicing.
  9. Serve the grilled chicken alongside the vegetables, drizzled with any remaining marinade if desired.
