Ingredients

  • Chicken thighs - 400 grams
  • Olive oil - 2 tablespoons
  • Shallots - 2, finely chopped
  • Garlic - 2 cloves, minced
  • Mushrooms - 150 grams, sliced
  • Cherry tomatoes - 150 grams, halved
  • Dry white wine - 100 milliliters
  • Chicken broth - 100 milliliters
  • Fresh thyme - 1 teaspoon, chopped
  • Fresh parsley - 1 tablespoon, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat the olive oil in a large skillet over medium heat.
  2. Season the chicken thighs with salt and black pepper, then add them to the skillet, browning them on both sides for about 5-7 minutes until golden brown. Remove the chicken and set aside.
  3. In the same skillet, add the chopped shallots and minced garlic, sautéing for 2-3 minutes until softened.
  4. Add the sliced mushrooms and cook for another 5 minutes until they are tender.
  5. Pour in the dry white wine and let it simmer for 2 minutes, scraping the bottom of the skillet to deglaze.
  6. Add the halved cherry tomatoes, chicken broth, and chopped thyme. Stir to combine.
  7. Return the browned chicken thighs to the skillet, nestling them into the sauce.
  8. Cover and let it simmer for 15-20 minutes, until the chicken is cooked through and the sauce has thickened.
  9. Finish with fresh parsley before serving.
