- Bresse chicken - 500 grams (cut into pieces)
- Unsalted butter - 50 grams
- Shallots - 2 medium, finely chopped
- Garlic - 2 cloves, minced
- Fresh thyme - 2 sprigs
- Chicken broth - 250 ml
- Heavy cream - 150 ml
- White wine - 100 ml
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a large skillet, melt the unsalted butter over medium heat. Add the Bresse chicken pieces and brown them on all sides for about 10 minutes.
- Remove the chicken from the skillet and set aside. In the same skillet, add the chopped shallots and minced garlic. Sauté until softened, about 3-4 minutes.
- Add the white wine to the skillet, scraping up any brown bits from the bottom. Let it simmer for 5 minutes until slightly reduced.
- Return the chicken to the skillet and add the chicken broth and fresh thyme. Season with salt and black pepper. Bring to a gentle simmer, cover, and cook for 25 minutes.
- Remove the lid and add the heavy cream. Stir well and cook for another 10 minutes until the sauce thickens slightly.
- Taste and adjust seasoning if necessary. Serve the Poule de Bresse garnished with fresh parsley.
