Ingredients

  • Bresse chicken - 500 grams (cut into pieces)
  • Unsalted butter - 50 grams
  • Shallots - 2 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh thyme - 2 sprigs
  • Chicken broth - 250 ml
  • Heavy cream - 150 ml
  • White wine - 100 ml
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a large skillet, melt the unsalted butter over medium heat. Add the Bresse chicken pieces and brown them on all sides for about 10 minutes.
  2. Remove the chicken from the skillet and set aside. In the same skillet, add the chopped shallots and minced garlic. Sauté until softened, about 3-4 minutes.
  3. Add the white wine to the skillet, scraping up any brown bits from the bottom. Let it simmer for 5 minutes until slightly reduced.
  4. Return the chicken to the skillet and add the chicken broth and fresh thyme. Season with salt and black pepper. Bring to a gentle simmer, cover, and cook for 25 minutes.
  5. Remove the lid and add the heavy cream. Stir well and cook for another 10 minutes until the sauce thickens slightly.
  6. Taste and adjust seasoning if necessary. Serve the Poule de Bresse garnished with fresh parsley.
