  • chicken thighs - 300 grams
  • olive oil - 2 tablespoons
  • onion - 1 medium, diced
  • garlic - 2 cloves, minced
  • carrot - 1 medium, diced
  • bell pepper - 1 medium, diced
  • chicken broth - 500 milliliters
  • long-grain rice - 150 grams
  • paprika - 1 teaspoon
  • cumin - 1/2 teaspoon
  • salt - to taste
  • black pepper - to taste
  • fresh parsley - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic, cooking until soft and fragrant, about 3-4 minutes.
  2. Add the chicken thighs to the pot, browning them on all sides for about 5-7 minutes.
  3. Stir in the diced carrot and bell pepper, cooking for another 3-4 minutes.
  4. Sprinkle in the paprika, cumin, salt, and black pepper, mixing well to coat the chicken and vegetables.
  5. Pour in the chicken broth, bringing the mixture to a boil. Once boiling, reduce heat to low and cover the pot, letting it simmer for 20 minutes.
  6. After 20 minutes, add the long-grain rice to the pot, stirring gently. Cover again and let it cook for an additional 15 minutes, or until the rice is tender and has absorbed the liquid.
  7. Fluff the rice with a fork and serve the Poule au Riz warm, garnished with fresh parsley.
