- chicken thighs - 300 grams
- olive oil - 2 tablespoons
- onion - 1 medium, diced
- garlic - 2 cloves, minced
- carrot - 1 medium, diced
- bell pepper - 1 medium, diced
- chicken broth - 500 milliliters
- long-grain rice - 150 grams
- paprika - 1 teaspoon
- cumin - 1/2 teaspoon
- salt - to taste
- black pepper - to taste
- fresh parsley - for garnish
Steps
- In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic, cooking until soft and fragrant, about 3-4 minutes.
- Add the chicken thighs to the pot, browning them on all sides for about 5-7 minutes.
- Stir in the diced carrot and bell pepper, cooking for another 3-4 minutes.
- Sprinkle in the paprika, cumin, salt, and black pepper, mixing well to coat the chicken and vegetables.
- Pour in the chicken broth, bringing the mixture to a boil. Once boiling, reduce heat to low and cover the pot, letting it simmer for 20 minutes.
- After 20 minutes, add the long-grain rice to the pot, stirring gently. Cover again and let it cook for an additional 15 minutes, or until the rice is tender and has absorbed the liquid.
- Fluff the rice with a fork and serve the Poule au Riz warm, garnished with fresh parsley.
