  • Cauliflower - 300 grams, chopped into florets
  • Carrots - 2 medium, sliced
  • Potatoes - 2 medium, diced
  • Celery - 1 stalk, chopped
  • Garlic - 3 cloves, minced
  • Onion - 1 medium, chopped
  • Vegetable broth - 500 ml
  • Dried thyme - 1 teaspoon
  • Dried rosemary - 1 teaspoon
  • Bay leaf - 1
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large oven-safe pot, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until translucent.
  3. Add the chopped celery and sliced carrots to the pot, cooking for an additional 5 minutes.
  4. Stir in the cauliflower florets, diced potatoes, thyme, rosemary, salt, and black pepper, mixing well.
  5. Pour the vegetable broth into the pot, add the bay leaf, and bring to a simmer.
  6. Cover the pot with a lid and transfer it to the preheated oven.
  7. Bake for 30-35 minutes or until the vegetables are tender.
  8. Remove from the oven, discard the bay leaf, and adjust seasoning if necessary.
  9. Serve hot, garnished with fresh parsley.
