- Celery - 1 stalk, chopped
- Garlic - 3 cloves, minced
- Onion - 1 medium, chopped
- Vegetable broth - 500 ml
- Dried thyme - 1 teaspoon
- Dried rosemary - 1 teaspoon
- Bay leaf - 1
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Preheat the oven to 200°C (400°F).
- In a large oven-safe pot, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until translucent.
- Add the chopped celery and sliced carrots to the pot, cooking for an additional 5 minutes.
- Stir in the cauliflower florets, diced potatoes, thyme, rosemary, salt, and black pepper, mixing well.
- Pour the vegetable broth into the pot, add the bay leaf, and bring to a simmer.
- Cover the pot with a lid and transfer it to the preheated oven.
- Bake for 30-35 minutes or until the vegetables are tender.
- Remove from the oven, discard the bay leaf, and adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley.
