  • Zucchini - 1 medium, diced
  • Cabbage - 200 grams, chopped
  • Chickpeas - 200 grams, cooked (canned or boiled)
  • Vegetable broth - 500 ml
  • Olive oil - 2 tablespoons
  • Thyme - 1 teaspoon, dried
  • Bay leaves - 1
  • Salt - to taste
  • Pepper - to taste
  • Parsley - for garnish, chopped

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until translucent, about 3-4 minutes.
  2. Add the sliced carrots, diced potatoes, and chopped celery to the pot. Cook for an additional 5 minutes, stirring occasionally.
  3. Pour in the vegetable broth and bring to a simmer. Add the zucchini, chopped cabbage, chickpeas, thyme, bay leaf, salt, and pepper.
  4. Reduce the heat to low and cover. Let it simmer for about 25-30 minutes, or until all vegetables are tender.
  5. Remove the bay leaf and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
