- Zucchini - 1 medium, diced
- Cabbage - 200 grams, chopped
- Chickpeas - 200 grams, cooked (canned or boiled)
- Vegetable broth - 500 ml
- Olive oil - 2 tablespoons
- Thyme - 1 teaspoon, dried
- Bay leaves - 1
- Salt - to taste
- Pepper - to taste
- Parsley - for garnish, chopped
Steps
- In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until translucent, about 3-4 minutes.
- Add the sliced carrots, diced potatoes, and chopped celery to the pot. Cook for an additional 5 minutes, stirring occasionally.
- Pour in the vegetable broth and bring to a simmer. Add the zucchini, chopped cabbage, chickpeas, thyme, bay leaf, salt, and pepper.
- Reduce the heat to low and cover. Let it simmer for about 25-30 minutes, or until all vegetables are tender.
- Remove the bay leaf and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
