- Chicken (preferably free-range) - 400 grams, cut into pieces
- Carrots - 2 medium, peeled and sliced
- Leeks - 1 large, cleaned and sliced
- Celery stalks - 2, chopped
- Potatoes - 2 medium, peeled and diced
- Garlic - 2 cloves, minced
- Fresh thyme - 3 sprigs
- Bay leaf - 1
- Chicken broth - 750 ml
- Olive oil - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a large pot, heat the olive oil over medium heat. Add the chicken pieces and brown them on all sides for about 5-7 minutes.
- Remove the chicken from the pot and set aside. In the same pot, add the minced garlic, chopped leeks, carrots, and celery. Sauté for about 5 minutes until the vegetables start to soften.
- Return the chicken to the pot and add the diced potatoes, thyme, bay leaf, chicken broth, salt, and black pepper. Bring the mixture to a boil.
- Reduce the heat to low, cover the pot, and let it simmer for about 45-60 minutes, or until the chicken is fully cooked and tender.
- Once cooked, remove the bay leaf and thyme sprigs. Adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley.
