Ingredients

  • Poularde (young chicken) - 1 kg
  • Olive oil - 2 tablespoons
  • Garlic - 4 cloves, minced
  • Fresh thyme - 2 tablespoons, chopped
  • Fresh rosemary - 1 tablespoon, chopped
  • Lemon - 1, juiced and zested
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Honey - 1 teaspoon

Steps

  1. Preheat your BBQ grill to medium-high heat.
  2. In a large bowl, combine olive oil, minced garlic, chopped thyme, chopped rosemary, lemon juice and zest, salt, black pepper, paprika, and honey to create a marinade.
  3. Rub the marinade all over the poularde, ensuring it's well coated inside and out. Let it marinate for at least 30 minutes, or up to 2 hours in the refrigerator for deeper flavor.
  4. Once marinated, place the poularde on the grill and cook for about 60 minutes, turning occasionally to ensure even cooking and to achieve a golden-brown color.
  5. Check the internal temperature of the chicken; it should reach 75°C (165°F) for safe consumption.
  6. Remove from the grill and let rest for 10 minutes before carving. Serve warm with your choice of grilled vegetables.
