Ingredients

  • Poularde de Bresse - 1 kg
  • Olive oil - 3 tablespoons
  • Fresh thyme - 2 sprigs
  • Fresh rosemary - 2 sprigs
  • Garlic - 4 cloves, minced
  • Lemon - 1, juiced and zested
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Honey - 1 tablespoon

Steps

  1. Preheat your BBQ grill to medium-high heat.
  2. In a small bowl, mix olive oil, minced garlic, lemon juice, lemon zest, honey, salt, and black pepper to create a marinade.
  3. Place the Poularde de Bresse in a large bowl or a resealable bag and pour the marinade over it, ensuring it's well coated. Add the thyme and rosemary sprigs. Marinate for at least 30 minutes in the fridge.
  4. Remove the Poularde from the marinade and let it come to room temperature for about 10 minutes.
  5. Place the Poularde on the grill, breast side down, and cook for about 20-25 minutes.
  6. Flip the Poularde and continue grilling for another 20-25 minutes or until the internal temperature reaches 75°C (165°F).
  7. Let the Poularde rest for 10 minutes before carving and serving.
